Welcome to my bbq4beginners blog. I will share several simple bbq recipes for all occasions and seasons and will include my verdict on each of them. All recipes cater for four and can also be done under the grill or on the hob as winter is approaching and bbq weather is starting to disappear! I aim to share weekly blogs and any comments or feedback would be greatly appreciated. Hope you enjoy!☺
KICKING OFF WITH SOME SIMPLE SKEWERS...
Autumn is kicking in so I have decided to make some Mediterranean inspired skewers to bring a bit of summer back before winter kicks in. I have chosen to use chicken and halloumi. You can add any vegetables you like to these skewers; tomatoes, courgettes, mushrooms whatever! I've decided to use onions and peppers.
Yummy Honey Chicken Kebabs🐔
Ingredients...
1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
2 cloves of garlic
2 small onions cut into 2 inch pieces
2 medium green peppers cut into 2 inch pieces
2 medium yellow peppers cut into 2 inch pieces
4 chicken breasts cut into 1 inch cubes
1 lemon
The Cook...
1. In a large bowl, whisk the honey, soy sauce, oil and pepper. Before adding the chicken, reserve a small amount of marinade to brush onto the kebabs later.
2. Add chicken, garlic, onions and peppers into the bowl, and marinate in the fridge for at least 2 hours.
3. Drain marinade from the chicken and vegetables and thread them alternately onto the skewers.
4. Place skewers onto BBQ and cook for around 12-15 minutes. Frequently turn and brush with the reserved marinade.
5. Once cooked through, remove from BBQ, squeeze lemon over each skewer and serve.
Halloumi Heaven🧀
Ingredients...
1 250g packet of chilli infused halloumi chopped into 2cm squares
2 medium red, green and yellow peppers cut into 2 inch pieces
1 tablespoon chilli oil or olive oil
salt and black pepper
1 lemon
To Cook...
1. Mix the, oil, lemon, salt and pepper together and pop it to the side
2. Start making the skewers by simply slicing the halloumi and vegetables and place evenly onto the metal or wooden skewers.
3. Once complete, place on a baking tray and brush each skewer with the marinade.
4. Cook on the BBQ for about 10-15 minutes turning a couple of times and brushing on more marinade.
5.When all veggies are tender and the halloumi is charred, remove from the BBQ, squeeze some lemon juice over each skewer and serve.
So Simple yet so tasty...
For two really cheap and easy recipes I was very happy with the outcome. The honey added a sweetness to the chicken which could also possibly benefit from some Nando's sauce to spice it up for those with a stronger pallette. I was surprised about how tasty the halloumi skewers were on their own without additional sauces or marinade. Next time, I might add some flatbread, tzatziki and a fresh green salad.
